  • Filtered water

  • Optional: 3 small slices of fresh ginger and 1 dried chili for flavor and warmth

Instructions

  1. Prepare the carrots.
    Wash and cut if needed, then pack tightly into a clean 1-liter glass jar, filling about 80% full.

  2. Add optional ingredients
    Add the ginger and chili if desired.

  3. Add salt and water.
    Sprinkle in 1 tablespoon of salt, then pour filtered water until it reaches about 1 inch from the top.

  4. Seal and set up.
    Close the lid loosely (not too tight) and place the jar in a small bowl to catch any overflow.

  5. Ferment.
    Leave the jar at room temperature for about 3 days. Open the lid once a day to stir and make sure the carrots stay submerged.

  6. Refrigerate.
    After 3 days, move the jar to the refrigerator to slow fermentation. Allow it to rest for about 1 week before enjoying.
